Lake Norman's New Beer Keeps Showing Up in Rooms You Already Know

October 29, 2026

Over the past year, every new craft beer option around Lake Norman has moved into a room that was already there. Some were already taprooms, and some were ready to become one after a renovation. One NASCAR-backed beer brand set up inside a Cornelius taproom that has been open since 2017. Birkdale Village finally got the brewery it had waited years for. Downtown Mooresville's next brewery spent a year rebuilding an existing building on South Broad Street. The breweries planned from the ground up are a different story. Two Cornelius projects drawn on fresh land are still unbuilt, and one of them was first expected to open in 2020.

So the reused rooms are where the beer is, and they will be through this holiday season and probably well beyond it. The details below tell you which addresses are pouring now, which are close, and which are still waiting.

A Cornelius taproom made room for a racing brand

In late May 2026, Michael Waltrip Brewing set up its Signature Bar inside Eleven Lakes Brewing at 10228 Bailey Road in Cornelius. CharlotteFive reported that the Waltrip beers were added to the taps in the existing Eleven Lakes taproom, alongside Eleven Lakes' own beers. The outlet later ran a correction calling it a partnership, not a standalone bar.

The order of events is what makes this part of a pattern. The same CharlotteFive article says Michael Waltrip Brewing had closed its Michael Waltrip Taproom in Concord less than a year earlier. A Mooresville taproom it opened in 2024 was eventually sold. After that, the brand came back to the lake by putting its taps in a room Eleven Lakes already ran. Cornelius is its fourth Signature Bar. The others are in Bristol, Clarksville and Nashville, Tennessee.

Teri Lippy, owner and general manager of Eleven Lakes, explained the arrangement in a statement quoted by CharlotteFive:

"Being a Michael Waltrip Signature Bar allows us to keep all the regular functions of our business and continue brewing our own beers that Eleven Lakes regulars love, while also being a home-base for Michael's beers and giving us access to limited edition and specialty brews from MWB."

If you're a regular, the room you already know now has more on tap. Talladega Light lager, Bristol Sunshine Tangerine Ale and The Big One are poured next to the house beers. Racing memorabilia from Waltrip's personal collection is on the walls, and the bar hosts race watch parties and themed events throughout the year.

Birkdale got its brewery inside a district that was already built

At Birkdale Village, the same idea played out on a bigger scale. Suffolk Punch Brewing opened in December 2025 at 16912 Birkdale Commons Parkway in Huntersville. Lake Norman Publications reported that Birkdale Village announced the opening on Dec. 17, and the paper's headline used the word "finally."

Lake Norman Publications described the space in an Oct. 7, 2026 roundup. It has a full-service lower level, an all-seasons patio, and a rooftop bar that looks over The Plaza. Beer comes from brewer Brad Maas, and the menu adds cocktails, natural wine and scratch-kitchen food. The parking, foot traffic and Plaza views were all there before the brewery arrived. On its own site, Suffolk Punch describes the Birkdale taproom as having an open-air rooftop, which pairs with the all-seasons patio below.

Mooresville's next two openings are both reuse projects

Both of the next openings on the lake's north end follow the same approach.

Churchill Brothers Brewing and RudeDog Distillery, 275 S. Broad St. The two businesses spent a year renovating an existing building in downtown Mooresville. They have passed all required inspections and received their certificate of occupancy. As of Lake Norman Publications' Oct. 7 report, they were working through the last steps with the North Carolina Alcoholic Beverage Control Commission, and no opening date had been announced. Brothers Joel and Nick Churchill run the brewery, with Joel as brewer. RudeDog belongs to Dave "Rudy" Rudy, who has worked for Joe Gibbs Racing for 26 years, and his wife and co-founder, Sheri Rudy. In the same report, the businesses said they were "getting closer every day to opening our doors."

The View Beer Garden & Sports Lounge, 155 Pinnacle Lane. According to the same Lake Norman Publications roundup, this one is moving into the space where Apps & Taps closed two years ago. It plans waterfront dining and live entertainment. No opening date has been released.

Huntersville is getting a smaller version of the same thing. Corkscrew Wine Shop sells draft and packaged craft beer, and its new location in Holbrook Town Center on Gilead Road was expected to open this fall, according to the same roundup.

All three are going into buildings that already have utilities, parking and a history as storefronts or restaurants. The remaining hurdles are permits and fit-out, which is a shorter list than a brewery built from scratch has to clear.

The from-scratch breweries are still on paper

Look at the two biggest brewery projects in Cornelius and the difference in timing is plain.

Royal Bliss Brewing's second location was approved by the Town of Cornelius on March 4, 2024. The plan is roughly 10,000 square feet on about 2.98 acres. The town's project page lists the address as 19149 West Catawba Avenue, and the restaurant and beer garden face Harbor View Drive. When the Planning Board recommended approval in February 2024, Cornelius Today reported a projected completion by late 2025. As of October 2026, the town still listed the project as under construction. The plans include an outdoor beer garden with a stage for live music.

Olde Mecklenburg Brewery's Cornelius location has been in the works even longer. OMB bought the former MacLean-Curtis Screw property in 2017. A 2019 plan aimed to open the brewery in the second half of 2020, Lake Norman Publications reported in 2021. The brewery is the centerpiece of two connected developments, Greenway Gartens and Caroline, on the northeast side of town between northern Zion Avenue and South Street. By September 2022, five years into the project, construction had not started. The current goal is a 2028 opening.

Project Type Early target Status as of Oct. 2026
Michael Waltrip Signature Bar at Eleven Lakes, Cornelius Taps added to an existing taproom n/a Open since late May 2026
Suffolk Punch Brewing, Birkdale Village New brewery inside an existing district n/a Open since December 2025
Churchill Brothers and RudeDog, Mooresville Renovated downtown building n/a Certificate of occupancy received, awaiting state ABC steps
The View, Mooresville Former Apps & Taps space n/a No opening date released
Royal Bliss Brewing, Cornelius New construction Late 2025 Listed as under construction
Olde Mecklenburg Brewery, Cornelius New construction, part of a mixed-use development Second half of 2020 Owners hope to open in 2028

One more project fits the same pattern. A 5,000-square-foot microbrewery with a tasting room was rezoned in 2024 for a 1.75-acre lot on the south side of N.C. 16 Business near Denver Industrial Park Road. No updates have been made public since.

Big, ground-up projects like these can still change Cornelius when they open. For this winter and next, though, the craft beer you can actually order around the lake is coming out of buildings that were already standing.

Matching the open taprooms to the holiday calendar

Three holiday events around the lake have confirmed 2026 dates, and two of them are in towns where one of these taprooms is already pouring:

  • Light Up Cornelius, Saturday, Nov. 28, 4 to 7 p.m. The annual tree lighting is in downtown Cornelius at 21445 Catawba Ave., per Visit Lake Norman. Eleven Lakes and its Waltrip taps are in the same town, on Bailey Road.
  • Christmas in Davidson, Thursday through Saturday, Dec. 3 to 5, 6 to 9 p.m. nightly. Opening ceremonies and the Town Green tree lighting are on Dec. 3, according to News of Davidson.
  • Lake Norman Lighted Christmas Boat Parade, Saturday, Dec. 19, 5 to 7:30 p.m. Charlotte On The Cheap lists Blythe Landing, Ramsey Creek Park, Peninsula Yacht Club and the Duke Energy Explorium at 13339 McGuire Nuclear Station Road in Huntersville along the route. The Explorium is in Huntersville, and so is Suffolk Punch at Birkdale.

If Churchill Brothers and RudeDog get their final state approval before the holidays, downtown Mooresville will have a new place to stop. Until the businesses announce a date, the opening is still pending.

When a vacant storefront or a closed restaurant gets a new tenant, the commercial corridor nearby changes too.
